Our gum paste is proven to give you great results. This is the product used at DeseretDesigns for all of our cakes.
When you receive your gum paste it will be a hard block. Cut off the amount you need and warm in a microwave for a few seconds. Be careful not to over heat the gum paste. You will be able to easily knead the gum paste until it is stretchy and pliable. Work in a small amount of shortening to help condition the gum paste. Roll out the gum paste on a surface lightly dusted with corn starch. When the gum paste is rolled thin enough, start feeding it through the pasta machine. Start with the widest setting and turn the dial to smaller settings each time you put the gum paste through the machine. Continue until the gum paste is at the desired thickness. Every pasta machine rolls the gum paste out to different thicknesses so it may take some experimenting to find the perfect thickness. It needs to be very thin for best results. When I cut my gum paste with the electronic cutter, I get very clean, sharp cuts. I have found that I get the best results by planning ahead. I roll out my gum paste and put it on plastic mats. The mats I use come from the discount store and are used to cut food on. I lightly coat the mat with shortening, put my rolled out piece of gum paste on and cover it with another mat. I wrap the mats in plastic wrap or put them in a 2 ½ gallon baggie. I let the gum paste rest over night. It will firm up, but not dry out. You can prepare you gum paste several days in advance, just be sure it is covered and stored in an air tight baggie.
